Use this cast-iron dosa pan by first preheating it on medium heat. Apply some oil & a piece of onion to give your dosa an extra-crispy texture while preventing it from sticking. Adjust the heat by sprinkling water on the pan. Once the tawa is hot, add your batter, spread it in a circular motion, & let it dry. Apply oil on the top & edges to lift the dosa. Flip it over & cook the other side to achieve the perfect crisp. Keep the pan seasoned to avoid sticking.
